2017 Crushed Bedrock CSR6 Cabernet Sauvignon
A powerful example of Cabernet Sauvignon. Big black cherries, cedar, raspberries, mixed berry compote, and layers of earth driven aromas. This wines overall balance is most notable, providing deep flavors and soft tannins alongside its intense fruit character. On the palate, it delivers rich and sweet blackberries, firm yet approachable tannins, baked blueberry cobbler, and a dusty earth note. Will age gracefully for 10-13 years.
Harvested in the early morning hours. The Cabernet Sauvignon and Petit Verdot were carefully de-stemmed and sent the fruit tank for partial whole berry fermentation. The grapes were cold-soaked for 5 days, allowing for increased color, aroma, and flavor. As for fermentation management, we pumped juice over the skins three times daily. After fermentation and pressing, the wine was sent to 60% new French oak, 40% neutral French oak barrels for 21 months.
